The slow bar was never meant to be a performance. It is a contract between barista and guest — an agreement that time, here, moves differently.
We dial in each morning before the doors open. Water temperature, grind size, pour rate — variables measured not for speed, but for clarity. When a guest sits at the bar, they are invited into that rhythm.
In a city that rewards urgency, restraint becomes radical. The slow bar is our quiet protest — and our greatest offering.
